Maybe one of the fuses removed power from the Engine Control Module and that cleared the CEL. It would take a number of driving cycles for the code and CEL to come back. There are no smarts in the coolant sensor. It's a pretty simple resistance based component. There are a whole other set of codes in the P011X range that set when the computer detects wiring or sensor faults and you are not seeing any of those. So, odds are it's the thermostat sticking.
