Default Coolant Temp Sensor vs Sender?

I did research and have not found a definitive answer on which one would be the ECTS that controls fuel/air mixture. On RockAuto there is a sender and a sensor for my 95 SL2. The sensor is identical to the air intake sensor and the sender is different. Which one controls the fuel/air mixture?

07/2018-PRESENT 1995 SL2
04/2009-01/2019 1994 SL1
