Default sputtery start and stall

I have a 2001 sc1 5spd with 117,000 miles. It has a problem, im a little stumped on. For a while now, and its been progessivly getting worse, it has not been hard to start but when you do its almost like it sputters to life, the rpms will jump to 1200 and then dive down to 600, then back up to 1000 and then back down to 700 and so on until it eventually levels out. It happens at stop lights but seems to run just fine. The sputtering only happens when you start it. Today it has apperently decided to start stalling at stop signs. The engine also likes to stumble when you let off the gas. I replaced what i thought was obvious, full tune up - spark plugs, wires, pcv, air filter, oil change. I also replaced the IAC and the EGR valve, hoping this might solve the issues. Does anyone have any ideas? Im at a loss here... Thanks

1-Replaced the original round nosed plastic coolant sensor with a flat nosed brass one?

2-Searched for intake manifold gasket leak and testing by spraying water or throttle cleaner around the intake manifold (emphasis on cyl #1) while idling?

Unfortunately, it hasn't thrown any codes. I believe the coolant temp sensor is brass, i think that was the first thing i replaced, just because the round noses are no good. Ill check again because that could be the cause of all kinds of neat problems. Ill have to play with my can of cleaner on the intake, I havent even thought about it. It will have to wait until i get the car back. However, the problem does go away for a while when the battery is reconnected, which kinda leads me away from the intake, although I will still check it as it could still be the issue.

Be sure the coolant sensor connector isn't fouled as this circuit works below 5v and resistance in fouled connections is interpreted as colder than normal coolant temperatures resulting in richer fuel mixtures. Poor connections can be result in erratic signals that would artificially raise and lower temperatures suddenly and affect fuel mixtures.
