Default thermostat problem

My coolant level indicator went to 259 degrees. before i could get heat. once the heat came the therostat went down to 190's. I think I have a problem with the thermosta not sure can there be any other problems.

I had a simliar problem a few years back. See thread below.

It ended up being fixed under a Tech Service Bulletin and Warranty. My problem was that two check valves had failed, iirc.

I have a 2007 Sky Red line.
I never had an over heating issue until recently.
I can run the car for hours on back roads and highways with normal temperatures.
Once I push the gas pedal down to the floor to excellerate the cars temperature will go to 258 degrees. If I let the car cool down completely then restart it will resume normal temperatures.
I thought it might be a stuck thermostat. Has anyone else seen this before?
