Under normal circumstances, heater core or ac evaporator coil replacement follows specific steps so parts aren't broken - facia covers, HVAC control panel, radio, etc.. Services manuals are written for careful step by step procedures. Since you're gutting the car to lighten it from excess weight, you don't need a service manual. Presuming you're removing all HVAC parts from the engine bay and interior and removing the radio, the one or two HVAC hoses and heater core hoses are simply disconnected by the firewall. The heater hoses are joined together with an inline coupler inserted into each hose end and clamped so the cooling system bypasses the heater core. Gutting the interior is simply a matter of removing panels, screws and clamps to remove part or all of the HVAC box, evaporator coil and heater core. The hvac control panel, presumed no longer needed, is disconnected and control cables removed, electrical connections to the blower are disconnected, blower motor left in place or removed. Gutting the interior and not reusing parts makes this easier, not worrying about breaking parts not used anymore unless you're selling them.
