Besides straight line acceleration I'm not sure how the V6 "drives inferiorly" to the V8? Both cars get the same suspension; both cars get the same tires (though you can upgrade to 19's on the GT);...

Time will tell. My G8 has the 3.6 V6, not the 6.0 V8, so I expect mileage to be similar to or perhaps 1-2 mpg worse than my Aura (same size V6). The G8 is about 200 lbs heavier.

If the coolant was being combusted away I'm surprised you didn't see any evidence coming from the tailpipe.

The smell is very easy to detect. If you haven't noticed it, the coolant isn't leaking outside.
