Sounds like pistons hitting valves.
Does it look like the pan bolts have been missing for a while or just now taken off? Shop may've pulled the pan to look at why the engine wasn't turning over....

Compression test isn't going to happen if the engine won't crank. Likewise with checking for spark.
Did the shop confirm engine seized by manually turning it, say by a wrench on the front pulley...
