Regarding the plugs. I recommend using the AcDelco 41-105
After removing the coil pack and boots, blow out the plug wells with compressed air to prevent dirt from falling into the cylinder.

Just a reminder. The socket is only to help remove the cap, hand tight only to put back on. Remember the o ring against the side of the housing creates the seal, not how tight the cap is.

What bearing kit are you using? Every bearing kit I have seen, KYB, Monroe, ACdelco, Raybestos, etc, include the bumb stop. Usually new struts don't come with them, but they should be in the mount...

The bump stops come with the bearing kits. You probably cant see them because they may have been pushed up to the top inside the bearing housing.
