I am thinking about upgrading my factory 235/65/16 rim and tire to the to 235/65/17 rim and tire. Would this work on my 2002 AWD V6 vue without messing up anything such as skewing the odometer?

You could look at sites such as:
Tire Calculator (http://www.miata.net/garage/tirecalc.html)
Calculator 2 (http://www.dakota-truck.net/TIRECALC/tirecalc.html)
I'm sure there are more. These sites let you input your current wheel and tire size, then look for upraded sizes. You can see if you can match your exact dimensions in order to keep your speedo in check (aor at least get very close to it)

Thank you for the links, one link stated that if the speedometer has been calibrated for 235/65 R 16 (28 x 9.25 x 16) tires, replacing them with 235/65 R 17's (29 x 9.25 x 17's) would result in the speedometer reading low by 3.44%.
Since the Vue came with several different sizes of tires depending on the type of Vue from various size 16 inch size tires and later a 17 inch and 18 inch rims, could my retailer reprogram my computer to recogonize the 17 inch rim and tires?

They are the same size, the OEM size is 235-60-17 not 235-65-17.

Diameter 28.03" (711.90mm)
235-60-17
Diameter 28.10" (713.80mm)
